300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Premix (produces 850ml, serving 10)

200ml citrus syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

Making the Citrus Syrup: Put every items inside a pan, bring to a simmer, stirring so the sugar melts. After that, turn off the burner and let it to cool completely. Decant into a clean bottle, cap it and refrigerate it in the fridge, where it will keep for around one month.

For the Premix: Pour all the liquids into a sizeable container, leave to sit for an hour, then filter it best through a fine cloth, so it's fully clarified.

For serving: Measure 85ml of your batch mix into a mixing glass containing ice, and stir gently for a minute until cold. Filter into a frosted cocktail glass or a similar vessel, garnish with the cranberries and complete it using a light spray with the mandarin essence over the top.
